Very informative on some techniques

I enjoyed this module. A lot of this stuff I already knew and do. The tips and tricks fascinate me and I’m excited to try. Like the coating of the spoon to keep the VBP from sticking to it and using foil to cover while cooking. I don’t know why the foil trick never occured to me as I have a hot running oven, but oh well, live and learn. Also the covering before cooling. I always get scared about that since hot cake is so vulnerable, but I’m determined to try it and see how it goes. Very well structured module. Instructions were clear. I was able to see what each step of the process looks like so I have a nice frame of reference. Good timing on each. Short and to the point without leaving out anything important. I’m very happy.
